Chinese Anchovies Fried Rice

Weekends are the days that hubby and I have to be awake early to get ourselves ready for church. Hence, most of the time, we would just grab a quick bite or gulp down food in any coffee shop. I definitely dislike those rushing moments, as I believe that one should slowly enjoy the food with their loved ones.

Last weekend, we had special guests with us, and they were none other than my lovely in-laws. So, instead of waking up early and rushing for breakfast, I decided to prepare something simple, yet healthy for them. Honestly, this was my first time cooking for them, therefore, the fear of not being able to cook well overwhelmed me.

Instead of having the usual American breakfast, I decided to do a quick Asian fried rice. This Chinese anchovies fried rice was easy to prepare yet, it was so delicious and nutritious. Woke up early to prepare the ingredients and thankfully, I was able to get them ready way ahead of my expected time. Both my in- laws were satisfied with the food and were impressed with its presentation (definitely played an important role in the overall food outcome).

Chinese Anchovies Fried Rice Recipe

Serves: 4 pax / Prep Time: 10mins / Cooking Time: 15mins / Level of Difficulty: Simple

Ingredients

  • 2 bowls overnight steamed basmati rice
  • 250g chicken breast (deskinned and diced into small cubes)
  • 5-6 French beans (finely chopped)
  • 1 carrot (finely diced)
  • Fresh scallions (finely chopped)
  • 1 red onion (cut into small cubes)
  • 3 tsp. small dried anchovies
  • 2 medium farm eggs (lightly beaten)
  • Canola oil
  • Salt, to taste

Marinade

  • 1 tsp. corn flour
  • 1 tbsp. soy sauce
  • 1 tbsp. sesame oil

Seasonings

  • 1 tbsp. soy sauce
  • 1 tbsp. fish sauce
  • 1/2 tbsp. oyster sauce
  • Few dashes white pepper

Instructions

1. Marinate the chicken and set it aside in the fridge for 15minutes.

2. Heat 1 tbsp. canola oil in non-stick frying pan and gently add in the egg mixture. When the egg puffs, flip it and cook the other side briefly. Remove from the pan and cut them into small pieces. Set aside.

3. Heat up the pan with 1 tbsp. oil. Add the small dried anchovies. Stir-fry the anchovies for 5-10 minutes until golden brown. Remove it from the pan and set aside.

4. Add the onions and stir fry until aromatic, followed by the chicken pieces. Stir-fry until the chicken pieces turn opaque.

5. Add the French beans and carrots. Do a quick stir to combine the ingredients well.

6. Add overnight rice into the pan and use a wooden spatula to break up the lumpy rice into small pieces.

7. Add the seasonings into the pan and ensure they mix well with all the ingredients.

8. Dish out and place the eggs, pan-fried anchovies; and scallions on top of the rice. Serve immediately.
